This bar is made with beautiful specialty cacao from the Tabasco state in Mexico which is centrally fermented in mango wood boxes by Revival Cacao and sold directly to the chocolate maker. I use a mixture of regular and turbinado sugar in this bar and used a cacao content of 65% to balance out the bean’s natural acidity and add a sparkle of sugar crunch, and I think the combination is magical. It’s currently my favorite bar!
