A blend of vanilla, cinnamon, allspice and cayenne pepper adds an umami flavor to this 75% dark bar with cacao from the Semuliki Forest in Uganda. There is not too much pepper - just a touch - so it is not ‘hot’ spicy…just ‘interesting’ spicy. Spices are added at the tempering stage to give the bar a bit of texture as well.
